Scientists from Louisiana State University analyzed samples of bran ( powder leather ) from black rice grown in the southern United States. As a result, scientists discovered black rice had higher levels of antioxidants such as anthocyanins ( anthocyanin ) are soluble in water.
Fruits and vegetables contain anthocyanins which are usually dark colored like blueberries. The black color like this also contained in black rice.
Research shows that antioxidants from plants could stop the dark harmful molecules, helps protect arteries and prevent the DNA damage that leads to cancer.
“Just a spoonful of black rice bran contains more anthocyanin larger than those found in blueberries. Black rice also contain a little sugar and more fiber and vitamin E antioxidants, ” said Zhimin Xu scientist Dr. as quoted from dailymail.
According to Dr. Zhimin, black rice plants would be economical to improve health. Food manufacturers said, could use black rice bran extracts to make cereals, beverages, cakes, biscuits and other healthy foods.
